“Langue de chat” biscuits, translated “Cat tongue” are made with ingredients that everybody most of the time has at home and they are very quickly made. It needs egg white, butter, caster sugar, and flour. It is also great for practicing piping skills!
In the original recipe, they are baked at 220C fan. Generally, smaller bakes are baked hotter and faster. Still, at that temperature they turn out to be golden brown on the edges, but not on the center.
I baked one batch at a lower temperature which makes them dark golden brown throughout the whole cookies. I prefer it that way, it results in a more caramelized flavour and the biscuits are even more crunchy.

- 60 g egg white
- 51 g butter softened
- 60 g icing sugar
- 69 g all purpose flour

- 1. Preheat the oven to 160°C.2. Whisk together the butter and the icing sugar. 3. Add half of the egg whites. 4. Add the flour.5. Add the rest of the egg whites.
By alternating the addition of wet and dry ingredients, it is easiest to combine the ingredients to a smooth batter without adding to much air. - 6. Pipe a dollop of batter at the 4 corners of the baking sheet and place the a sheet of baking paper on top.
Sticking the baking paper with some batter onto the baking sheet will ensure that it does not move during piping and baking. - 7. Pipe the langue de chat biscuits.
- 8. Bake for approximately 12 minutes.
Especially with small pastries the baking time varies hugely. Keep a close eye on the cookies and remove once golden brown. - Et voilà!
