1. Preheat the oven to 160°C.2. Whisk together the butter and the icing sugar. 3. Add half of the egg whites. 4. Add the flour.5. Add the rest of the egg whites. By alternating the addition of wet and dry ingredients, it is easiest to combine the ingredients to a smooth batter without adding to much air.
6. Pipe a dollop of batter at the 4 corners of the baking sheet and place the a sheet of baking paper on top.
Sticking the baking paper with some batter onto the baking sheet will ensure that it does not move during piping and baking.
7. Pipe the langue de chat biscuits.
8. Bake for approximately 12 minutes.
Especially with small pastries the baking time varies hugely. Keep a close eye on the cookies and remove once golden brown.
