1. Combine honey, brown sugar and butter in a pot, heat until combined. Transfer to a bowl and let cool to room temperature.
2. Dissolve the Potassium carbonate in the water, set aside.
3. Sift together flour, ginger bread spice and cocoa powder.
4. Combine honey mixture, dry ingredients, egg and potassium carbonate. Knead to a smooth dough.
5. Cover in plastic film and let rest overnight.
6. Preheat the oven to 160°C fan.
7. Roll out the dough and cut out some busses. Place them on a baking sheet covered with a silicone mat or baking paper.
8. Bake for approximately 6 minutes.
