Instructions
Almond Tuile Biscuits
1. Preheat the oven to 160°C (fan).
2. Prepare a baking sheet with parchment paper.
3. Mark a circle with a diameter of 6cm onto the plastic sheet. Cut it out to make a stencil.
4. Melt the butter and set aside.5. Whisk together egg white, sugar and flour.6. Add the butter and combine until just smooth.7. Fold in the almonds. Crush them a little bit with the whisk to better incorporate them into the batter.
8. Spread the batter over the stencil, creating an even layer. Remove the stencil.
9. Proceed with the rest of the batter.
10. Bake for approximately 17 min. until golden brown.
11. Remove from the oven one by one with the help of the offset spatula. Place onto the rolling pin and gently press the sides of the cookie against the rolling pin until cooled down to a point that it is not flexible anymore. Let cool completely.
If the biscuits turn too hard before being able to be shaped, put them back into the oven and they will become flexible again.
